New York Style Cheesecake

Found this yummilicious cheesecake recipe online!! It turned out really good and yummy!
Give it a go!



New York Style Cheesecake
4 8oz packages of cream cheese
1 can (14oz) sweetened condensed milk
4 eggs
1/3 cup flour
1 tablespoon vanilla extract

In a mixer, soften cream cheese and beat until spreads easily. Add sweetened condensed milk, beat until combined, scraping sides of bowl as necessary. While beater is running, add one egg at a time until combined and add the vanilla. A few little lumps of cheese are fine, but try to thoroughly mix. Lastly beat in the flour. Set aside.

Crust
1/3 cup butter
1/3 cup white sugar
1 egg
1 1/4 cup flour

Mix ingredients in a small bowl until crumbly and starting to stick together. If you want a crust that is just on the bottom, use a single batch. Double the batch to get what you see in the picture above.
Preheat oven to 350.

Bottom Crust only: Line the bottom of a 9" springform pan with parchment paper. If you don't like your cheesecake sticking to sides of the pan, line the sides as well. A bit of butter makes a good glue to keep the parchment in place. Press single batch of crust mix into bottom evenly. You can use the back of a tablespoon to smooth it out. Pour in your cheesecake batter.

NY Style Crust: For a crust all the way up the side, press half of a double batch into the bottom of the pan, then use the rest to press around the sides. Don't worry about it looking perfect. This is a rustic looking cheesecake. Just try to get it as even as possible up the sides of the pan (about 2 1/2 - 3 inches, I think). Pour in the cheesecake batter. Don't panic if there's more batter than crust. It'll still cook great. You'll just know next time you could've gotten the crust a bit higher.

Whichever style you make, bake on bottom rack of oven for approximately 1 hour. Could take 15 minutes more depending on your oven and the weather.

Bottom rack is essential to get the bottom of the crust well cooked if you are not blind baking first. Some ovens can be temperamental, and for that I suggest blind baking first to ensure you don't have an underdone crust. Blind bake the crust for 10 minutes before adding the filling.

You'll know its done when the top is puffed and golden without looking wet in the center, and it doesn't jiggle too much. Remove to a cooling rack. Let it cool to room temperature before chilling, otherwise the top will get sweaty. Chill for 6 hrs or overnight for best results. It is a very thick cake so it does take a while. Cut with a wet knife to keep it from sticking to the blade. I cut it into 12 pieces.

Variations:

Marble Cheesecake: Half the batter. Melt 3 oz of semi-sweet chocolate and stir into one half. Alternate portions of plain and chocolate batter, use a knife to marble as desired.

Lemon Cheesecake: Substitute vanilla for any extract of preference. It doesn't hurt to add some zest if you have a fresh lemon around. The lemon is a flavoring rather than being tart like a pie. Goes really well with a homemade raspberry sauce. Try your favorite extract. It is difficult to go wrong.

Additional Notes: For adding actual fruit, I'd just suggest checking other recipes on the internet and experimenting. So long as the batter doesn't get runny and you don't mess with the basic structure, this is a pretty flexible recipe. And if you love your toppings, pretty much any fruit or sauce goes well.
One dinner party I put together a bowl of strawberries in a lightly thickened sauce, a bowl of cooked blueberries, and a bowl of raspberry sauce (seeds strained out). People simply spooned their favorite over their piece of cheesecake.

I think it would be possible to make this into a sugar free recipe. 1 can of sweetened condensed milk is essentially 1 cup of evaporated milk cooked together with 1 1/4 cup sugar until the sugar dissolves. It stands to reason you could use just the cup of evaporated milk and then your equivalent sweetener of choice. You may have to cook the cheesecake a little longer, or I might try adding a bit of extra flour or cornstarch for thickener. As for the sugary crust... well you could replace it with a nice ground nut base like pecans and almonds on the bottom of the pan.

Happy Rainbow roses?!


Pretty ain't they?? These are real roses!! Though I agree they look kinda fake! The colours are not painted or sprayed onto this wonderful blooms! Instead, these roses are genetically modified. Plant extracts are injected into the stems and the extracts will travel up through the rose where it acts as a sort of dye. The roses will turn from their natural colour to what you can see in the pictures!



The Rainbow Rose is now available in the UK for the first time and it seems that there is a little science involved in this rather expensive rose - a single one will set you back over thiry US dollars. They are also known as the Happy rose because of its cheerful array of colours! =)
 
Still prefer the natural colours though..

Matcha Green Tea Pound Cake

Yummy recipe I found online!! Taste great and a hit with my family!! Happy!! =D
I doubled the recipe because I found the amount too little, it might require a longer baking time. I baked mine in a square cake tin for about 55 minutes in total.

Ingredients:

  • 2 large eggs
  • 1 cup flour
  • 2/3 cup sugar
  • 1/2 cup butter
  • 1 Tbsp matcha (green tea powder)
  • 1/2 tsp baking powder

Preparation:

Cream butter in a bowl. Add sugar in the butter and mix well. Gradually add beaten eggs and stir well. Sift flour, baking powder, and green tea powder together and add the flour to the egg mixture. Pour the batter into a buttered loaf pan. Bake in preheated 170 degrees C oven for about 30-40 minutes. *Makes 4 servings

I love you mommy, but you don't love me :(

He started to talk about something called wedlock, and money, and bills, and stuff I don't think I understand yet. You were still happy, though, so it was okay. Then he did something scary, Mommy. He hit you. I could feel you fall backward, and your hands flying up to protect me. I was okay... but I was very sad for you. You were crying then, Mommy. That's a sound I don't like. It doesn't make me feel good. It made me cry, too. He said sorry after, and he hugged you again. You forgave him, Mommy, but I'm not sure if I do. It wasn't right. Daddy came to see you today, Mommy. I got really scared. He was acting funny and he wasn't talking right. He said he didn't want you. I don't know why, but that's what he said. And he hit you again. Home Made Caramel Sauce

This sauce is surprisingly easy to make. One note of caution is to be extra careful while you are cooking the sugar, as with any candy making process. Once the sugar has melted it has a much higher temperature than boiling water. Also, when you add the cream, the mixture will foam up, so use a pan with high sides. This is prefect for drizzling over ice cream or used to add a touch of flavour to your cakes or brownies!

 

Ingredients

  • 1 cup of sugar
  • 6 Tbsp butter
  • 1/2 cup heavy whipping cream

Method

1 First, before you begin, make sure you have everything ready to go - the cream and the butter next to the pan, ready to put in. Making caramel is a fast process that cannot wait for hunting around for ingredients. If you don't work fast, the sugar will burn. Safety first - make sure there are no children under foot and you may want to wear oven mitts; the caramelized sugar will be much hotter than boiling water.

2 Heat sugar on moderately high heat in a heavy-bottomed 2-quart or 3-quart saucepan. As the sugar begins to melt, stir vigorously with a whisk or wooden spoon. As soon as the sugar comes to a boil, stop stirring. You can swirl the pan a bit if you want, from this point on. Note that this recipe works best if you are using a thick-bottomed pan. If you find that you end up burning some of the sugar before the rest of it is melted, the next time you attempt it, add a half cup of water to the sugar at the beginning of the process, this will help the sugar to cook more evenly, though it will take longer as the water will need to evaporate before the sugar will caramelize.

3 As soon as all of the sugar crystals have melted (the liquid sugar should be dark amber in color), turn off the heat and immediately add the butter to the pan. Whisk until the butter has melted.

4 Once the butter has melted, Count to three, then slowly add the cream to the pan and continue to whisk to incorporate. Note than when you add the butter and the cream, the mixture will foam up considerably. This is why you must use a pan that is at least 2-quarts (preferably 3-quarts) big.
5 Whisk until caramel sauce is smooth. Let cool in the pan for a couple minutes, then pour into a glass mason jar and let sit to cool to room temperature. (Remember to use pot holders when handling the jar filled with hot caramel sauce.) Store in the refrigerator for up to 2 weeks. Warm before serving.
Makes a little over one cup of sauce.

*Whisk in a touch (1/4-1/2 tsp) of vanilla after the cream. You can add flavoring oils for variety. Raspberry, lemon, orange, for example, are also tasty in the right recipe. Adding bittersweet chocolate is wonderful on ice cream, drizzled on cheesecake, fruit, or right off the spoon.

NEVER LAUGH AT A CHINESE............‏

A Chinese man walks into a bank in New York City and asks for the loan officer. He tells the loan
officer that he is going to China on business for two weeks and needs to borrow $5,000.

The bank officer tells him that the bank will need some form of security for the loan, so the
Chinese man hands over the keys to a new Ferrari parked on the street in front of the bank. He
produces the title and everything checks out.

The Loan officer agrees to accept the car as collateral for the loan. The bank's president and its
officers all enjoy a good laugh at the Chinese for using a $250,000 Ferrari as collateral against a
$5,000 loan.
An employee of the bank then drives the Ferrari into the bank's underground garage and parks it
there.

Two weeks later, the Chinese returns, repays the $5,000 and the interest, which comes to $15.41.
The loan officer says, 'Sir, we are very happy to have had your business, and this transaction has
worked out very nicely, but we are a little puzzled. While you were away, we checked you out and
found that you are a multi-millionaire. What puzzles us is why you would bother to borrow $5,000?
The Chinese replies: 'Where else in New York City can I park my car for two weeks for only $15.41
and expect it to be there safely when I return.'

Delikate Hearty Mix for Small Rodents!

Just bought these treats for my bunnies and hamster and they loved it!! It is mainly made up of cereals, glucose, minerals, vitamins and seeds.

My girl bunny is usually very skeptical to food and will take some time to get used to new products.

Usually when I give her something new, she would sniff at it for the longest time. After sniffing, she would take her time to taste it and give it a few licks. If that little lick appealed to her, she would then proceed to take a small itty bite.

She's really picky and likes to nit pick on everything, so imagine my surprise when she immediately gobbled up the Hearty treat!! =)

Maybe it helps that it comes in a cute Heart shape too..ha! Girls just love hearts! Ha!

The good thing is..it helps to trim the teeth of rodents and aids in their digestive system.

This will make a good treat for the little ones! =)

A touching love story!

To those who are married, .. Not married .. and soon to be married, I hope you will be touched with this story...

MARRIAGE

When I got home that night as my wife served dinner, I held her hand and said, I've got something to tell you. She sat down and ate quietly. Again I observed the hurt in her eyes. Suddenly I didn't know how to open my mouth. But I had to let her know what I was thinking. I want a divorce.. I raised the topic calmly.

She didn't seem to be annoyed by my words, instead she asked me softly, why? I avoided her question. This made her angry. She threw away the chopsticks and shouted at me, you are not a man! That night, we didn't talk to each other. She was weeping. I knew she wanted to find out what had happened to our marriage. But I could hardly give her a satisfactory answer; she had lost my heart to Dew. I didn't love her anymore. I just pitied her!

With a deep sense of guilt, I drafted a divorce agreement which stated that she could own our house, our car, and 30% stake of my company. She glanced at it and then tore it into pieces. The woman who had spent ten years of her life with me had become a stranger. I felt sorry for her wasted time, resources and energy but I could not take back what I had said for I loved Dew so dearly.
Finally she cried loudly in front of me, which was what I had expected to see. To me her cry was actually a kind of release. The idea of divorce which had obsessed me for several weeks seemed to be firmer and clearer now.

The next day, I came back home very late and found her writing something at the table. I didn't have supper but went straight to sleep and fell asleep very fast because I was tired after an eventful day with Dew.

When I woke up, she was still there at the table writing. I just did not care so I turned over and was asleep again. In the morning she presented her divorce conditions: she didn't want anything from me, but needed a month's notice before the divorce. She requested that in that one month we both struggle to live as normal a life as possible. Her reasons were simple: our son had his exams in a month's time and she didn't want to disrupt him with our broken marriage. This was agreeable to me. But she had something more, she asked me to recall how I had carried her into out bridal room on our wedding day. She requested that everyday for the month's duration I carry her out of our bedroom to the front door ever morning.. I thought she was going crazy. Just to make our last days together bearable I accepted her odd request. I told Dew about my wife's divorce conditions.. . She laughed loudly and thought it was absurd. No matter what tricks she applies, she has to face the divorce, she said scornfully..

My wife and I hadn't had any body contact since my divorce intention was explicitly expressed. So when I carried her out on the first day, we both appeared clumsy. Our son clapped behind us, daddy is holding mummy in his arms. His words brought me a sense of pain. From the bedroom to the sitting room, then to the door, I walked over ten meters with her in my arms. She closed her eyes and said softly; don't tell our son about the divorce. I nodded, feeling somewhat upset. I put her down outside the door. She went to wait for the bus to work. I drove alone to the office.

On the second day, both of us acted much more easily. She leaned on my chest. I could smell the fragrance of her blouse. I realized that I hadn't looked at this woman carefully for a long time.. I realized she was not young any more. There were fine wrinkles on her face, her hair was graying! Our marriage had taken its toll on her. For a minute I wondered what I had done to her.

On the fourth day, when I lifted her up, I felt a sense of intimacy returning. This was the woman who had given ten years of her life to me. On the fifth and sixth day, I realized that our sense of intimacy was growing again. I didn't tell Dew about this. It became easier to carry her as the month slipped by. Perhaps the everyday workout made me stronger. She was choosing what to wear one morning. She tried on quite a few dresses but could not find a suitable one. Then she sighed, all my dresses have grown bigger. I suddenly realized that she had grown so thin, that was the reason why I could carry her more easily. Suddenly it hit me... she had buried so much pain and bitterness in her heart.

Subconsciously I reached out and touched her head. Our son came in at the moment and said, Dad, it's time to carry mum out. To him, seeing his father carrying his mother out had become an essential part of his life. My wife gestured to our son to come closer and hugged him tightly. I turned my face away because I was afraid I might change my mind at this last minute. I then held her in my arms, walking from the bedroom, through the sitting room, to the hallway. Her hand surrounded my neck softly and naturally. I held her body tightly; it was just like our wedding day. But her much lighter weight made me sad.

On the last day, when I held her in my arms I could hardly move a step. Our son had gone to school. I held her tightly and said, I hadn't noticed that our life lacked intimacy. I drove to office.... jumped out of the car swiftly without locking the door. I was afraid any delay would make me change my mind...I walked upstairs. Dew opened the door and I said to her, Sorry, Dew, I do not want the divorce anymore. She looked at me, astonished, and then touched my forehead.. Do you have a fever? She said. I moved her hand off my head. Sorry, Dew, I said, I won't divorce. My marriage life was boring probably because she and I didn't value the details of our lives, not because we didn't love each other any more. Now I realize that since I carried her into my home on our wedding day I am supposed to hold her until death do us apart. Dew seemed to suddenly wake up. She gave me a loud slap and then slammed the door and burst into tears. I walked downstairs and drove away.

At the floral shop on the way, I ordered a bouquet of flowers for my wife. The salesgirl asked me what to write on the card. I smiled and wrote, I'll carry you out every morning until death do us apart. That evening I arrived home, flowers in my hands, a smile on my face, I run up stairs, only to find my wife in the bed - dead.

The small details of your lives are what really matter in a relationship. It is not the mansion, the car, property, the money in the bank. These create an environment conducive for happiness but cannot give happiness in themselves. So find time to be your spouse's friend and do those little things for each other that build intimacy. Do have a real happy marriage! If you don't share this, nothing will happen to you. If you do, you just might save a marriage. Many of life's failures are people who did not realize how close they were to success when they gave up.

He was finally found and reunited with his family when a photographer happened to take his photos and posted it up on the web. To his surprise, the photographs begin to gather a lot of attention and thus leading fans and reporters to go down and find out more about this man.. Read on..

A homeless man who spends his days and nights wandering the streets of Ningbo, Zhejiang province, has almost gained star status, thanks to his “good looks and sharp dress sense”. A growing number of Internet users are tracking the whereabouts of the still unidentified man, whose “fans” have nicknamed him Brother Sharp (犀利哥). He is one of the most talked about personalities in Chinese cyberspace today. Several netizens have dubbed Brother Sharp as the “most handsome underdog of this century”.

Origin

On the morning of January 30, 2010, a photographer took his new SONY camera to Tian Yi Square and decided to try out his new lens, by shooting street scenes for the photography community forum, www.fengniao.com. The photographer, Mr. Tu, captured a few shots of a homeless man, who he said was “bearing dignification” as he walked down the busy streets.
“He has a very special temperament,” stated Mr. Tu, “so I couldn’t help but pick up the camera and take a few shots.”
Later that day, Mr. Tu went home and sent his photos to the website, but had not expected to receive the upcoming attention.

Brother Sharp

On February 21, a Tianya Club forum user posted a thread, titled 《秒杀宇内究极华丽第一极品路人帅哥!帅到刺瞎你的狗眼!求亲们人肉详细资料》, roughly translated as “Behold the number one ultimate, gorgeous, handsome passer-by! Blind your dog eyes! Seeking detailed information on his flesh.”



-“…a starkly handsome Chinese man walking with a model’s measured gait, and wearing a rag-tag but well coordinated overcoat on top of a leather jacket. His eyes peer into the middle distance, in what one fan described as ‘a deep and penetrating way’, and he strides confidently forward.” Photos of the man’s handsome features, from the eyes, clothing, hairstyles, uninhibited decadence, and even smoking facial expressions, were all revealed. Netizens dubbed the homeless man “Brother Sharp” because of his “sharp style”. Brother Sharp had become a fashion icon, catching many attention not only in China, but even in Hong Kong, Taiwan and Japan.


Forum users had immediately started posting their own take on Brother Sharp


Just five days after, on February 26, at 20:00 (CST), the Tianya post hits millions of views and Google searching “犀利哥 (Brother Sharp)” presented 463,000 search results. An update on March 5, Google searching “犀利哥” will give more than 15 million search results. Ever since his picture was discovered, people had been trying to locate this mysterious man. Many netizens find it hard to believe that such a handsome man could be homeless. Could he be just a model? The Tianya Club vigilante group, Human Flesh Search expanded their efforts into finding Brother Sharp and knowing more about him.


 Ningbo Internet users proved that Brother Sharp is a genuine beggar; not an actor or posing model. He is often found at an infested area near the East entrance of the Xinhua Bookstore. Apparently, he is mentally unstable.
Due to his growing popularity, the main-stream media decided to get involved in this internet phenomenon. Locals had suggested to send him to a homeless shelter due to his unwanted presence on the streets. However, netizens opposed to this idea, and started to resent promoting Brother Sharp’s popularity. The mass-media were constantly harassing him with questions and urges to go receive help. Many went to find him, but when confronted he would become frightened and just cry without speaking.

His identity was discovered on March 5, when his younger brother met him in the hospital and recognized him as his long lost brother. Brother Sharp’s real name is Chen Guorong, born October 10, 1975, and is from the Boyang County, Jangxi province. He left home to work 11 years earlier and his family lost contact with him.
On March 8, 2010 Brother Sharp has been reported to have returned to his home in Poyang when his family found him due to his unwanted fame. Locals and authorities supported his homecoming by sending the family food and supplies. One local logistics company offered to donate 2000 yuan, and the local government helped the family apply for subsistence allowances.

Ha! Loved him since his Phantom of the Opera movie! Really charming!

However, just checked and realise that the release date of the movie for Singapore is still far ahead - 6th May 2010... No choice but to wait patiently....

Korean Drama - Temptation of Wife / Cruel Temptation



Recently got hooked onto this Korean Drama Temptation of wife, a.k.a Cruel temptation.

Initially I thought it was another boring old Korean love story, but it came with an interesting twist!

Maybe it was also because I have this interest to find out how a family breaker a.k.a third party sees or thinks before she breaks up a family that makes me want to carry on watching...And now I'm hooked...!!

The TV series is going very slow and I'm hoping it would speed up soon..
An hour a day is not enough as the plot thickens and more complications are brought up!!
Just when you thought that the female lead could finally have her happy ending..the supposedly dead real Min So Hee reappears!!

There's never a boring moment and it makes you tug at hair when you see the evil counterpart Shin Ae Ri triumphing. It tugs at your heart when Goo Eun Jae couldn't get to be with the man she loved!

There's a total of 129 episodes and all 3 of the main leads have gotten an award for this drama series.

Cha Soo Kyung, the singer of the theme song (I Can't/ Won't Forgive) for this drama has strong vocals and a beautiful voice and the song is really good! It's full of feelings and sounds really sad and painful...just like how the female lead suffers..Here's the english lyrics for the song..

Valentines' Blackforest

Surprise Surprise!!
His favourite black forest cake for Valentines'!
Wanted to give him something handmade rather than just buy it this year
and I thought since I'm took up baking again recently..
Why not bake for him?
So I went to get the ingredients..
the chocolates, the non-dairy cream, the red cherries, the dark cherry fillings etc..
I have supplies of flour, sugar, butter etc at home, so not a problem there.. 
We watched Daybreakers at my home and I surprised him with the cake!
Glad he Loved it!! =D

First attempt at Kueh Lapis..

Made Kueh Lapis for CNY this year as my grandma was craving for it..
My, it sure is tedious work..
Baking layer by layer, removing the pan from the oven over and over again..
I could manage only a few layers...I think each layer pretty thick..wasn't sure how much to pour on each turn..my grandma used to have at least 18 layers on her cake..
guess mine is about only 7-8 layers...gotta work harder..
But nevertheless, it turned out pretty alright and I'm quite satisfied with the taste..
My bf commented that it smelt like banana cake..it does..wonder how that smell came about with no bananas added...Anyway, Pictures below..
*Cut me some slack..it was only my 1st attempt..

Avatar - I See You by Leona Lewis

I Love Love this song from Avatar!
It's one of the best movies I've ever watched and I wanna watch it over and over again!!
If only such a beautiful dreamy world exist... the graphics were so beautiful and I can't help feeling awestruck throughout! I'm truly amazed by the brainy imaginations of director James Cameron! The plot, the animations, the characters, the amazing scenery, his craft is undoubtedly amazing!
This is by far the best movie so far from his repertoire (Titanic, Terminator, Aliens etc). Although the movie lasted for 162 mins, it didn't felt that long at all and I was devastated when it came to the end of the movie.. I dare say it will totally blow you away! Definitely a must watch!!
